Spicy indian potatoes; with spinach and tomatoes


This recipe is actually a twist on the traditional indian dish called sukha aloo. Basically it is recipe for baked potatoes with spices and vegetables  It is easy to make and also a healthy side dish.


You will need the following ingredients:
  • 500 grams of potatoes
  • 1 cup of chopped spinach
  • 3 tomatoes, sliced in cubes
  • 1 teaspoon of salt
  • 1 teaspoon of kurkuma
  • 2 tablespoons of olive oil
  • 10 curry leaves
  • 1 teaspoon of cumin seeds
  • 1 chopped onion
  • 2 cloves of chopped garlic
  • 1/2 teaspoon of minced ginger
  • 1/2 teaspoon of cayenne pepper
  • a pinch of black pepper
  • 1/2 teaspoon of mango powder (aamchoor)
  • 1/2 teaspoon of coriander seeds powder (dhania)
  • Fresh chopped coriander leaves
  • 1 cup of water

Cooking instructions:
  1. Boil the potatoes with 1/2 teaspoon of salt and 1/2 teaspoon of kurkuma.
  2. Heat the olive oil in a frying pan. Add the chopped onion.
  3. When the onion turns golden brown, add the cumin seeds, garlic, ginger and curry leaves and fry for a few minutes.
  4. Add the tomatoes, spinach, mango powder, cayenne pepper  black pepper, coriander seeds powder and the remaining salt en kurkuma.
  5. Add the water and simmer for 5-8 minutes.
  6. Add the potatoes when the water is absorbed. Mix the potatoes well with the other ingredients and  stir fry for 5 minutes.
  7. Add the coriander leaves and mix well.


Apple turnovers
































Apple turnovers are a type of pastry. They are delicious and easy to make. This is a recipe for a quick and easy apple turnover.



You will need the following ingredients:


  • 6 frozen puff pastry sheets
  • 2 large apples
  • 50 grams of brown sugar
  • 1 1/2 teaspoon of cinnamon
  • cinnamon sugar or regular sugar
  • 3 tablespoons of water

Cooking instructions:

  1. Place the frozen puff pastry sheets on a tea towel and let it defrost.
  2. Preheat the oven to 200 degrees Celsius.
  3. Peel the apples and slice them in small cubes. Put the cubes in a bowl.
  4. Add the sugar and cinnamon to the apples and combine the ingredients
  5. Add the apple mixture with a spoon on a pastry sheet.
  6. Fold the pastry sheet into a triangle and press the edges together to seal.
  7. Spread a little water on the surface of the pastry with a cooking brush.
  8. Drizzle the surface of the pastry with the cinnamon sugar.
  9. Repeat the previous steps with each pastry sheet.
  10. Place all the apple turnovers on a baking sheet.
  11. Bake for about 20 minutes in the preheated oven until golden brown.

Hummus

Hummus is a very popular dish in the Middle East. The main ingredients are chickpeas. Hummus contains lots of fiber and protein and it fits perfectly in a low carb diet, such as the South Beach Diet.


How to make hummus?


You will need the following ingredients:

  1. A can of chickpeas, or 225 grams of cooked chickpeas
  2. 2 cloves of garlic
  3. 2 tablespoons of tahini, or 2 tablespoons of peanut butter
  4. 2 tablespoons of fresh lemon juice
  5. 1/2 teaspoon of salt
  6. 2 tablespoons of olive oil
  7. 1/4 teaspoon of black pepper
  8. 1/2 tablespoon of cumin powder
  9. 1 tablespoon of water

Put all the ingredients directly into the chopper. Blend for 2-5 minutes until the mixture is smooth.

Basic roti recipe

Roti is a popular flatbread and is mostly consumed in India. Roti is also very popular in the Southern Carribean, particularly in Suriname. There are many varieties of roti. In this article you will learn how to make "sada roti": a plain roti made of white flour.


You will need the following ingredients:


  • 2 1/2 cup of self raising flour
  • 2 tablespoon of olive oil (or vegetable oil)
  • 1 cup warm water
  • Vegetable oil for tava

Cooking tools:


Cooking instructions:
  1. Place the flour and the oil in a bowl.
  2. Add water slowly and start kneading as the dough starts to come together.
  3. Let the dough rest in the bowl for about 10 to 15 minutes.
  4. Put the dough on the counter. Sprinkle a little flour on the counter to prevent sticking.
  5. Roll out the dough with the roller pin in a large circle. With the cooking brush, spread out about 1 tablespoon vegetable oil on the dough. Now roll the dough up, forming a long roll.
  6. Cut the roll in to 8 pieces. 
  7. Heat up the tava (medium heat)
  8. Roll out each piece of dough into a thin circle.
  9. Spread 1 teaspoon of oil on the tava with the cooking brush.
  10. Put the dough on the tava. As soon as "bubbles" appear, spread a little oil on the surface of the dough with the cooking brush and flip the dough over to cook the other side.
  11. Flip the dough over again and let it cook for a few minutes.
  12. If both sides of the dough are nicely cooked, your roti is ready to serve!

Aloo mutter

Aloo mutter is a vegetarian Punjabi dish. The main ingredients are potatoes, peas and tomatoes. 

It is also a very healthy dish, as it contains lots of vegetables. 

How to make aloo mutter?

You will need the following ingredients:

  • 3 large boiled potatoes, sliced in cubes
  • 3/4 cub of peas
  • 3 chopped tomatoes or a can of peeled tomatoes
  • 1/2 teaspoon cumin seeds
  • 1 chopped onion
  • 2 tablespoons olive oil
  • 3 cloves of garlic, finely chopped
  • salt to taste
  • 1 teaspoon of minced ginger 
  • 1 sliced green pepper
  • 1 teaspoon black pepper
  • 1 teaspoon paprika powder
  • 1 teaspoon mango powder ("aamchoor")
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon tumeric powder
  • 1 bay leaf
  • chopped coriander
Cooking instructions:
  1. Heat the olive oil in a frying pan. Add the onion. 
  2. When the onion gets golden brown, add the cumin seeds, garlic and the bay leave.
  3. Add the potatoes, green pepper, salt, black pepper, paprika powder, mango powder, garam masala and tumeric powder. Add 1/2 cup of water. Simmer covered until water is almost absorbed.
  4. Smash a few potatoes for a thick gravy. Add more water.
  5. As soon a the water starts boiling again, add the tomatoes and the peas.
  6. Simmer covered on low heat for about 10 minutes. Add more water if necessary.
  7. Garnish with the coriander.

Serving tip:

Serve with roti or basmati rice and fresh salad.
