Aloo mutter is a vegetarian Punjabi dish. The main ingredients are potatoes, peas and tomatoes.
It is also a very healthy dish, as it contains lots of vegetables.
How to make aloo mutter?
You will need the following ingredients:
- 3 large boiled potatoes, sliced in cubes
- 3/4 cub of peas
- 3 chopped tomatoes or a can of peeled tomatoes
- 1/2 teaspoon cumin seeds
- 1 chopped onion
- 2 tablespoons olive oil
- 3 cloves of garlic, finely chopped
- salt to taste
- 1 teaspoon of minced ginger
- 1 sliced green pepper
- 1 teaspoon black pepper
- 1 teaspoon paprika powder
- 1 teaspoon mango powder ("aamchoor")
- 1/2 teaspoon garam masala
- 1/2 teaspoon tumeric powder
- 1 bay leaf
- chopped coriander
Cooking instructions:
- Heat the olive oil in a frying pan. Add the onion.
- When the onion gets golden brown, add the cumin seeds, garlic and the bay leave.
- Add the potatoes, green pepper, salt, black pepper, paprika powder, mango powder, garam masala and tumeric powder. Add 1/2 cup of water. Simmer covered until water is almost absorbed.
- Smash a few potatoes for a thick gravy. Add more water.
- As soon a the water starts boiling again, add the tomatoes and the peas.
- Simmer covered on low heat for about 10 minutes. Add more water if necessary.
- Garnish with the coriander.
Serving tip:
Serve with roti or basmati rice and fresh salad.
